One Meal for Parents and Baby

I’ve never been a very healthy eater per se, nor has my husband. But since I started cooking for Xaia, I started thinking, instead of letting her grow into our habits, we should start switching to her feeding style.

Most of the vegetables and fruits that I buy for her are organic. All the meals that I cook for her are very healthy, and I am very meticulous about all the ingredients that go into her meals. But for us, not so much…

So it’s time for the whole family to eat healthy too. Here’s what I tried today and worked perfectly for the 3 of us. Instead of cooking a meal for her, and a meal for us (or open a can of something), I cooked one healthy meal for all of us, and I just pureed her portion. Xaia really loved it! But I think more than anything, she appreciated the fact that she was eating what we were eating. Yesterday, I had noticed she got upset that she was eating something totally different than I was, little did she know, hers was so much better!

The meal is a Lebanese dish that I learned from my mom, it’s called “Sbenigh b’Riz” which literally means “Spinach over rice” and here’s the recipe:

1 lb of spinach washed and cut of their stems (for baby spinach you may leave the stems) and then chopped in large pieces
1 lb of ground beef
1 cup of pine nuts
1 cup of mushrooms
1/2 an onion finely chopped
2 lemons squeezed
2 tbsp of Olive Oil
2 cups of rice

Pour the olive oil in a large pan (that will fit all the ingredients later)
Stir the onion in the oil on low heat for about 5 min or until brownish
Add the pine nuts and stir for 2 min
Add the ground beef and stir about 5 min or until cooked
Add pepper and salt to taste
Add the mushrooms then the spinach
Add 2 cups of water
Leave on low heat for about 15 minutes or until spinach is all tender
Stir occasionally
When spinach is covered with water add the lemon juice
Stir for 3-4 minutes then turn off heat

Meanwhile, in a separate pot cook 2 cups of rice in 4 cups of water (I usually add a little more water so the rice is tender enough for baby)

For mom and dad:
Pour rice in a bowl and add the spinach mix on top and serve

For baby:
Add some rice to the spinach mix and puree
Make sure there is enough sauce in the baby’s portion to puree well
This portion should feed the family twice
